Tasty Tuesday #23

Hey guys! I'm back again with another Tasty Tuesday!

I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.

 Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.

Today I am featuring:
 
BBQ Chicken Pizzas
 
 
Ingredients:
 
-cooking spray
-1 cup cooked chicken
-3 oz. gouda cheese, shredded
-1/2 cup cilantro, chopped
-4 medium whole wheat tortillas
-1/2 cup BBQ sauce
-1/2 small red onion, diced
 
 
Directions:
 
1. Preheat oven to 425 degrees. Coat baking sheet with spray. Place tortillas on pans.
 
2. In small bowl, toss chicken with BBQ sauce. Divide among tortillas and sprinkle with 3 tablespoons of cheese and 2 tablespoons of onion.
 
3. Bake until cheese melts and bottoms of tortillas are lightly browned. (5-7 minutes)
 
4. Remove from oven and sprinkle with 2 tablespoons cilantro. Slice into 4 wedges.
 
Notes:
 
*I actually didn't have any gouda on hand this time around, so I used mozzarella cheese. Just choose your preference!
 
Serving Size: 1 "pizza"
Serves: 4
Cook Time: 5-7 minutes

  2. This looks so good and I don't really even like barbeque. I would probably use mozzarella cheese too.

  3. Oh this looks delicious! I'm trying to cook more and this seems simple enough. Plus my husband LOVES pizza but I hate it. This looks like a good compromise!

  4. Ok, that's a great idea to make a one serving size pizza out of tortillas! Will have to have to try this one for sure!
