Tasty Tuesday #4

Hey guys! I'm back again with another Tasty Tuesday!

I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.

 Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.

 Today I am featuring:
 
Spicy Beef Tacos & Salsa
 

 
Ingredients:
 
-cooking spray
-2 cloves, garlic (minced)
-3/4 tsp salt
-3/4 lb. lean ground beef
-1 1/2 tsp cumin
-1 and 1/2 cups diced tomatoes
-1/2 cup cheese
-2 cups lettuce
-1/3 cup salsa
-8 tortillas
 
Directions:
 
1. Coat skillet with spray and heat over medium-hi heat. Add garlic and cook stirring 30 seconds-1 minute.
 
2. Add beef and brown.
 
3. Add cumin, salt, and tomatoes. Cook until most liquid is absorbed.
 
4. Top each taco with 1/4 cup beef, 1/4 cup lettuce, 1 tbsp cheese, 2 tsps salsa.
 
5. Fold and serve.
 
Notes:
 
1.The name of this recipe is kind of a misnomer in my opinion. These tacos are NOT spicy at all.
 
2. I love making my own taco mix. Cumin is a magical spice I tell you.
 
Serving Size: 2 tacos- 1 serving

Because it was Super Bowl weekend I also made my salsa! I love it and it's super easy to make.
 
Ingredients:
 
-1 can Rotel, Mild
-1 can Rotel, Lime and Cilantro
-1/4 cup red onion
-1/3 cup cilantro
-1 clove garlic
 
Directions:
 
Throw it all together in a blender and BLEND! The end! LOL.
 
Notes:
 

Salsa is not bad for you- it's the chips that aren't.

The bowl you see above is a double batch. :)

I love to eat with blue tortilla chips.

  2. I have no idea what Rotel is! But I love salsa so I must go google and see what I come up with :) Sounds easy and 'the end' made me laugh!
