Tasty Tuesday #6

Hey guys! I'm back again with another Tasty Tuesday!

I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.

 Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.

 Today I am featuring:
 
Bowtie Pasta with Sausage and Spinach
 

Ingredients:

-6oz. bowtie pasta
-1 tsp olive oil
-1/4 tsp salt
-8oz turkey sausage, mild Italian
-1 small onion, chopped
-8 cups baby spinach
-14 1/2 oz. can diced tomatoes, fire roasted
-4 garlic cloves, sliced thinly
-3/4 cup reduced sodium chicken broth
-1/4 cup parmesan cheese
-1 tsp crushed red pepper flakes

Directions:

1. Cook pasta.
2. Heat olive oil in skillet over medium-hi heat.
3. Add sausage and onion. Cook until lightly browned (5 minutes).
4. Add garlic, spinach, and broth to skillet. Cook stirring often until spinach is tender (5 minutes)
5. Stir in tomatoes and red pepper flakes. Cook until heated through.
6. Spoon sauce over pasta; toss to coat. Sprinkle with cheese.

Notes:

*This recipe originally called for escarole instead of spinach. I didn't know where to find escarole at the time, so I just substituted for baby spinach!

*I also don't quite use 8 cups of spinach. It just depends on how much spinach you like in meals. I think this time I around I used about a half of a bag.

*I get really lazy and don't always add the garlic. Mainly because I don't ever feel like slicing it. Meh. The recipe still tastes good to me!

Serving Size: 1 1/2 cup pasta mix= 1 serving
Serves: 6
Cook Time: 12 minutes

  1. I want to eat some right now for breakfast!! I love me some pasta and I can't wait to make this myself. Have I told you lately how much I love this new feature of yours? Except for the fact that I always seem to pull it up when I haven't eaten yet and now my tummy is rumbling :/ Haha! I think this is my favorite recipe you've put up so far though :D

    1. Rofl! You are so funny! And YAY! This makes me so happy that you like it! I am glad someone's reading it! Haha! You do always pull it up when you're hungry! And probably don't have the ingredients! :D I am so obsessed with turkey sausage with pasta, and this is one of my favorites too!

  4. I love this but I use ground beef. And you should get a garlic smasher. Makes things sooooo easy!

    1. A garlic smasher?! What is this and why do I not know about it? LOL. That would definitely make life easier for me! Usually I just used minced garlic for everything. Haha. This would be yummy with ground beef too!
