Tasty Tuesday #17
Hey guys! I'm back again with another Tasty Tuesday!
I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.
Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.
Today I am featuring:
Chicken and Cheese Quesadillas
¡Feliz Cinco de mayo!
-8 oz. cooked chicken
-1 tsp lime juice
-8 whole wheat tortillas
-2 tbsp. sour cream
-1/4 tsp cumin
-1/4 tsp salt
-6 tbsps. shredded cheese
-1/2 cup salsa
-green, yellow, red bell pepper (diced)
1. In small bowl coat chicken with lime juice, cumin, and salt.
2. Top tortilla with 1/3 cup chicken, 2 tbsp. salsa, 1 1/2 tbsp. cheese, and top with green onions and peppers.
3. Top with another tortilla.
4. Coat large skillet with healthy dose of cooking spray. Cook on each side until golden brown (2-3 minutes)
No notes! You can jazz this up a bit more, but I find one quesadilla to be very filling!
Serving Size: 1 quesadilla
Cook Time: 6-7 minutes
