Tasty Tuesday #29

Hey guys! I'm back again with another Tasty Tuesday!


I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.


 Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.

 
Today I am featuring:
 
Slow Cooker Chicken Burritos
 

 
Ingredients:
 
-3 chicken breasts
-1 clove garlic, minced
-1 small red onion, chopped
-14 and 1/2 oz. can, diced tomatoes with green chiles
-1/2 tsp. chili powder
-1/2 tsp. salt
-1/4 tsp. oregano
-1/4 tsp. black pepper
-3/4 cup, chicken broth
-whole wheat tortillas
-3/4 cup shredded cheese
-2 bell peppers, sliced (one red and one green)
 
Directions:
 
1. Place garlic, onion, tomatoes, bell peppers, chili powder, salt, oregano, and pepper in slow cooker and stir well.
 
2. Add chicken and broth. Cover and cook on low for 5 hours, drain off liquid.
 
3. To serve, spoon about 1/2 cup of burrito mixture down center of each tortilla; top with 1 tbsp. cheese and any additional toppings.
 
Notes:
 
*This was a little messy. I think next time I'll either use very little broth or eliminate it completely.
 
*I added lettuce, sour cream, and salsa to the top of my burrito.
 
*The chicken was SO tender. I loved it.

    1. Right?! I was totally blown away by that too! Because who thinks of burritos in the crock pot? Haha.
