Tasty Tuesday #8

Hey guys! I'm back again with another Tasty Tuesday!
 
I do alter my recipes to fit my own tastes, so please also feel free to refer back to the original recipe at the bottom of the post to see what I may have eliminated.
 
 Most of my recipes are Weight Watcher friendly, but don't let that scare you away. They are actually really good. I've also found some great websites like Skinny Kitchen and Skinny Taste that I use a lot too. Most of my recipes have some kick to them, so if you are not a big spicy person, adjust the spices to better fit your tastes. OH. And all of the meals I cook are really easy to prepare. I'm not big on difficult meals.

 Today I am featuring:
 
Spaghetti Amatriciana

 
 
 
Ingredients:
 
-8oz. whole wheat spaghetti
-6 slices bacon
-2 cups diced tomatoes
-1/8 tsp salt and pepper
-1 tsp olive oil
-1 onion, diced
-1/4 tsp red pepper flakes
 
Directions:
 
1. Cook pasta until al dente; reserve 1/4 cup water and drain pasta.
 
2. Heat oil in skillet- cook bacon and remove.
 
3. Add onion and cook until lightly browned.
 
4. Crumble bacon in pan and add tomatoes and red pepper flakes.
 
5. Toss to mix and coat.
 
6. Add pasta and reserved water to tomato sauce. Toss to coat.
 
Notes:
 
* I am NOT a bacon fan. There, I said it. I never in a million years thought I would like this recipe, but holy moly- I DID! Crumbling the bacon up helps too. I also use thinly sliced bacon (from a box, don't judge) and I think that helps my palette too.
 
Serving Size: 1 and 1/2 cups= 1 serving
Serves: 4
Cook Time: 12 minutes

    1. ROFL. I don't know why... I must be broken. Bacon just isn't my thing. I like it when it's thin or crumbled though. And yay! This makes me so happy to hear, you have NO idea. <3

  2. Sigh. I had spaghetti last night but it was nothing like this. This looks beyond YUM. I do enjoy bacon but not tot he point where most people do. I've seen people who are like the dogs in those Beggin Strips commercial and are like BACON!! But I think it's interesting putting it in spaghetti like this. Tay is like you and isn't the biggest bacon fan but I think even he will appreciate a recipe like this. Yumtastic choice this week Jess!!

    1. Haha. Yeah, that's not me with bacon either. I like that when you crumble it up, it really just adds flavor instead of overwhelming it. And thanks girl!

  3. I could live off spaghetti, cereal and beans for the rest of my life. No lie. I havent tried it with bacon yet but I have tried it with pancetta, yum!

    1. HAHAH. I am such a pasta eater. I'm so glad I've found healthier alternatives so I can continue to eat it! Ooh pancetta! That would be delish too!

  4. Oh my gosh, THIS LOOKS SO AMAZING! Spaghetti is one of my favorite foods so I'm always up for new recipes :)

    1. Yay! It's one of my all time new favorite recipes! I saw it in the WW booklet I got and was like, meh. But then I tried it and was like, OMG, I love this!
